5 Great Recipes for Fresh Summer Strawberries

The u-pick strawberry season is just around the corner, and I’m excited to say that this will be the first year that I’ll be heading out to pick strawberries together along with my family and a few friends. While visiting Krause Berry Farms last week, we learnt that their u-pick crop is scheduled to open sometime between June 10th & 15th this year, and since I’m going to need a lot of strawberries for my upcoming wedding, u-pick seemed like a great experience (and way to save  a little money)!

Since not everybody will be making a ton of strawberry favours this summer (like me), here are a few amazing strawberry recipes to inspire you to head out a pick a few pounds for yourself!

1. Champagne Strawberry Dressing

This recipe is a favorite in our household, and it’s been a hit when made both with and without the champagne! It tastes so sweet and dessert like but it’s healthy – best thing ever! It goes great with a spinach salad, throw on a few almonds, sweet onion and a few extra strawberry pieces and you’ll be craving salad all summer long! PS – if you think the rest of the champagne might go to waste, try purchasing a package of four small bottles of champ instead of one big one!

2. Strawberry Scones

I’ve always been a fan of cheese and blueberry scones (separate, of course!), that I’m really not sure why I haven’t considered making strawberry scones before. These look so fresh and delicious, and I can only imagine how delicious they would smell while baking in the oven!

3. Strawberry Freezer Jam

As a jam newbie, I love how simple and easy this recipe looks. I grew up on homemade strawberry jam, and I can assure you that it is so much better than the store bought varieties. I’m confident that this will be the summer that I turn my kitchen into a jam making factory, if only for a day or two!

4. Strawberry Mojitos!

Since I am a little intimidated about the whole jam making adventure, I just might need a little something to help me get through it (I kid, I kid)! Regardless, this summertime beverage is perfect for porch-side sipping, especially with fresh mint straight from the garden. A yummy twist on a great classic!

5. Individual Strawberry Crumble

Sometimes, I have a wee bit of a problem with portion control. By this I mean I could potentially eat an entire dessert in a very short amount of time. Especially when it’s made of fresh berries! I love the idea of individually sized desserts, and it gives me a reason to serve them in the cute bowls I recently picked up from Anthropologie. If you have children, it’s a great recipe to have them help with, by creating their own little bowl of goodness!

Have you ever picked your own strawberries before? It really is a great way to spend a few hours in nature, with family or friends, and at the end of the day you have a ton of yummy red berries to take home with you! Just don’t get too distracted socializing and forget how many pounds you may have already picked… or else you might be making more of these recipes than you originally anticipated!
